Not only is Oink’s hog roast very tasty, but the pigs are farm reared by Adam, on his farm in Berwickshire and are fed natural, local foodstuffs. The meat is very high quality and will not disappoint in terms of taste. Oink’s own bacon is superior to many supermarket brands too and the founders do feel that customers get a true quality product when they come into Oink.
They also operate their highly successful Oink mobile catering service, which specialises in both hog and lamb roasts and regularly caters for weddings, birthdays and other special occasions, as well as every kind of corporate event.
The Founders: Sandy and Adam
Adam Marshall, pig farmer and Sandy Pate, sheep farmer are from Berwickshire, in the beautiful Scottish Borders. As working farmers, they had the simple idea of bringing quality natural product from the farm to the city. Passionate about good and honest food, they wanted to introduce a very different food concept to Edinburgh, with fresh and delicious Scottish hog roast rolls.
Coming from families who have farmed in Berwickshire for many generations, Sandy and Adama like to think they know a thing or two about good meat! They began by specialising in hog roasts and brought their freshly carved hog roasts to the Edinburgh Farmers Market, at Castle Terrace, back in 2001.
The friend’s delicious hog roast rolls (pulled pork as some people know it) were such a runaway success with the public, that they decided to open a first shop in Edinburgh – and that’s when Oink was born.
Oink was launched in Edinburgh’s Victoria Street in the Summer of 2008 and they have been serving delicious hog roast rolls to hungry workers, locals, students, festival goers, shoppers and tourists 7 days a week ever since!
The second shop opened in the summer of 2013 in the Canongate area of Edinburgh’s historic Royal Mile. And in 2017 the third shop in the heart of Edinburgh on Hanover Street.
Oink of Edinburgh
Having seen the growing popularity of hog roast through their Farmers Market stall, and knowing that it’s the ideal quick and tasty meat to serve hot on a roll, like bacon, Sandy and Adam decided to go one better and open a shop specialising in just that. They hit upon the name of Oink of Edinburgh to set it apart. It’s a fun name which has certainly attracted a lot of attention.
They have built up a huge loyal following from students and tourists and from hungry office workers on the run. They know they will get good, speedy service from us and a high quality tasty product.

Sandy and Adam have been working on their business for years, learning what equipment works best and how to source it; getting the pricing right and the branding perfect.
The next step would be to capitalise on the obvious strength of the Oink brand, their systems, methods and quality ingredients, but micro managing staff all over the UK is not one of their strength. This is what led the Oink team to franchising. The founders want every branch of Oink to be owned by someone with a real passion for the business, who will uphold the company ethos of uncompromising quality and service.
